**Tuk Tuk Method:** This paste will make an incredibly authentic massaman curry. Our tip is to use coconut milk with a high coconut extract (at least 75% coconut extract) and to add a teaspoon of ground star anise at the beginning!

**Ingredients:** Chilli, Lemongrass, Garlic, Salt, Galangai, Shallot, Shrimp Paste.
