Pat Chun Black Rice Vinegar is made from traditional fermented rice vinegar and slow cooked with spices. It is often used to adjust the sweetness and acidity of pork feet, eggs, and ginger vinegar and to make the feet softer and smoother. It can also be used in place of white vinegar to braise meat and as a marinade.
