Tuk Tuk Method: 1. Wash 250g Koshi Yutaka Rice with cold water, stirring in a circle with your hand. Drain and repeat until water is clear, then soak in cold water for 15-30 minutes before draining it thoroughly. Soaking allows the rice to absorb water right to the centre of each grain for even cooking. 2. Add 300ml of water and the washed rice to a heavy-based saucepan. Bring to the boil and simmer for approx. 12 minutes with the lid on. 3. Turn off the heat and leave to stand with the lid on for 15-30 minutes, before serving.
