What's the difference between salted duck eggs and century eggs? Salted duck eggs are cured in salt, which firms the yolk and gives it a rich, salty taste. Century eggs, also called preserved eggs or pidan, are cured in an alkaline mix that turns the white into a dark jelly and the yolk creamy.
