Bamboo Skewers

Bamboo skewers are one of those things you only remember at the exact moment you need them, so it pays to keep a bag in the drawer. This collection stocks them in four lengths — 6, 7, 8 and 10 inches — in generous 200-piece bags that will see you through a summer of grilling and then some.

Match the length to the job. Six-inch skewers are the satay and yakitori size: short enough to fit a frying pan or a small grill, and the right length for individual portions at a party. Eight inches suits kebabs and marshallows over the fire pit. The ten-inch skewers are the workhorse for full-size barbecue kebabs and for threading meat for a proper char siu-style roast. They are also the ones to reach for when setting up a hotpot or street-food-style spread at home.

One tip worth repeating: soak bamboo skewers in water for at least twenty minutes before they go near a grill. Dry bamboo scorches and can catch; soaked bamboo chars slowly and holds together. For very long cooks, wrap the exposed ends in foil.
