Description: Lao Gan Ma Crispy Chilli in Oil 210g is the cult Chinese chilli oil with the stern lady on the jar — and the first one most UK cupboards reach for. Inside: crispy chilli flakes and fried onion in fragrant soybean oil, with preserved black beans, Sichuan peppercorn and a gentle hum of sweetness. It is more savoury crunch than face-melting heat, so you can spoon it over almost anything. One jar goes a long way.
Tuk Tuk Method: Spoon over noodles, dumplings or plain rice. Mix with black vinegar and soy sauce for an instant dumpling dip. Fry eggs in it, or stir through fried rice right at the end.
Storage: Store in a cool, dry place away from direct sunlight. Refrigerate after opening.
