Bamboo earns its place for practical reasons. It is harder than most woods, so it resists scarring, yet it has enough give to keep your knives sharper for longer. It resists water better than hardwood, which matters in a board that gets washed daily, and it is naturally less prone to harbouring smells — useful in a kitchen that sees a lot of garlic, ginger and spring onion. The range runs from a compact fruit board for small jobs up to a forty-centimetre butcher-style block that will handle a whole chicken or a weekend's worth of stir-fry prep. The dual-sided board is a sensible choice for keeping raw and cooked prep separate.
Care is simple: hand wash, dry upright, and rub with a little food-safe oil every few weeks. Keep bamboo away from the dishwasher — the heat and steam will warp it.
