Dried goods are the backbone of the Asian larder — ingredients that wait patiently in the cupboard and turn into dinner with a soak and a simmer. This collection is our full dry-store range: mushrooms, beancurd, seaweed, dates, berries, beans and spices.
Dried mushrooms are the essential purchase. Shiitake and winter mushrooms, soaked for twenty minutes, develop a deeper, meatier flavour than fresh ones ever manage — and the soaking liquid is free stock for soups and braises. Beancurd sticks and sheets — the dried skins from soy milk — rehydrate into silky layers for braises, hotpot and vegetarian goose. Dried white fungus plumps into a delicate, crunchy cloud for sweet soups, and lotus seeds, red dates and goji berries are the trio behind countless Cantonese soups and teas.
On the seasoning side: star anise, dried seaweed and wakame, preserved mandarin peel and kaffir lime leaves — the small things that make a dish taste right.
