Description: East Asia dried lotus seeds 東亞牌 白蓮子 are a Chinese store-cupboard staple, sometimes known as lotus nuts. Drying concentrates their mild, slightly sweet flavour, and once soaked and simmered they turn soft and floury, a little like chestnut. They are the seed ground down to make lian rong, the smooth lotus seed paste inside mooncakes, and they are just as often simmered whole in savoury soups and sweet tong sui desserts. Soak them in water for a few hours or overnight before cooking so they soften evenly.

Tuk Tuk Method: Simmer soaked seeds with pork ribs, red dates and goji berries for a classic Chinese soup. Cook gently with rock sugar and dried longan for a sweet tong sui. Or boil until very soft, then blend with sugar and oil for homemade lotus seed paste for mooncakes and buns.

Storage: Store in a cool, dry place away from direct sunlight. Reseal and use promptly once opened.
