Cooking Utensils

The right cooking utensils make Asian cooking noticeably easier, and this collection gathers the tools we reach for most: bamboo sushi mats, steam racks, ladles, spatulas, skewers and the small sauce dishes that complete a table.

Some of these earn their keep weekly. A bamboo sushi rolling mat is essential for maki and just as useful for rolling omelette or shaping rice logs. A metal steam rack turns any wok or saucepan into a steamer — sit a plate of fish or a bowl of rice on it, lid on, and you have the setup for a hundred Chinese dishes. A slotted bamboo spatula is gentle on seasoned wok surfaces in a way metal never will be.

Then there are the table pieces: melamine soup ladles for serving broth at the table, little sauce dishes for soy, chilli oil and black vinegar, and bamboo skewers for satay and grilling days. None of these cost much, but together they close the gap between cooking Asian food and cooking it comfortably.
