Fresh Thai morning glory — also known as water spinach, kangkong or ong choy — is the Southeast Asian green with tender leaves and hollow stems that stay satisfyingly crisp. Tuk Tuk Method

Stir-fry hard and fast with garlic, chilli and oyster sauce (or fermented bean curd for the classic Thai version). Blanch and dress with lime juice, fish sauce and a pinch of sugar. Or add to curries and noodle soups in the last minute of cooking.

Storage

Keep refrigerated in a bag with a sheet of kitchen paper and use within 2–3 days.
