Description: East Asia Brand Dried White Fungus 東亞牌 雪耳 120g is a bag of dried snow fungus — the pale, frilly mushroom that turns soft and slightly gelatinous when simmered. It has a very mild flavour of its own, so it soaks up whatever it is cooked with. In Chinese cooking it goes two ways: sweet tong sui dessert soups with red dates and goji berries, or savoury broths and steamed dishes.
Tuk Tuk Method: Soak in warm water for 30 minutes until fully expanded, trim off the hard yellow base, then simmer for about an hour. For the classic sweet soup, cook with red dates, goji berries and rock sugar until the broth turns slightly silky. For savoury, add to chicken soup with ginger.
Storage: Store in a cool, dry place and away from direct sunlight.
