Fresh Chinese chives (韭菜), also called garlic chives, are a staple of Chinese home cooking — garlicky, grassy and far bolder than ordinary chives. The flat green leaves keep their flavour well when cooked, and a little goes a long way. They arrive fresh, and the classic use could not be simpler: chop and stir through beaten eggs for the much-loved Chinese chive and egg stir-fry. They are also the traditional filling partner for pork in dumplings and chive boxes.

Stir-fry with beaten eggs and a pinch of salt. Chop into dumpling or chive-box fillings with minced pork. Or scatter over noodle soups and congee just before serving.

Storage

Keep refrigerated, wrapped in kitchen paper inside a bag, and use within a few days.
