Tuk Tuk Method: How to Cook: Wash 300g rice under the tap, in a sieve, until the water runs clear, then soak rice for 30 minutes. Drain the water then add the rice to a pan along with 300ml water. Cover the pan and bring the mix to a boil. Boil for 5 minutes then reduce heat to low (keeping lid on), Allow to simmer for 10 minutes before removing from heat. Leave the rice to stand covered for 10 more minutes. How to season: Mix 2 tablespoons Japanese rice vinegar with 2 tablespoons mirin (rice wine), add 1 tablespoon white sugar and 0.5 tsp salt then gently heat and mix for 1 minute. Place the cooked rice in a bowl and pour over the vinegar mixture, carefully folding it into the rice. Once mixed together leave the rice to cool.
Storage: Store in a cool, dry place away from direct sunlight.
