Tuk Tuk Method: Step 1: Finely chop the prawn/pork/chicken, onion, carrot, mushroom. Step 2: Soak the rice noodles in to water 5 mins and set aside. Step 3: Mix all the above ingredients with the spice mix and the egg (after take out its shell). Step 4: To make the rolls, briefly dip a rice paper wrapper in a bowl of warm water, remove and place on dry surface, smoothing it with your fingers. Step 5: Place the mixture onto the wrapper. Fold one end of the wrapper over the filling, then fold on the sides and roll up tightly, pressing to seal. Repeat until all the ingredients are used up. Step 6: Heat the oil in a pan, put the rolls into the heated oil and fry them until they turn to medium golden-brown. Place the rolls on npaper towers to drain. Step 7: Serve hot with the dipping sauce.
Storage: Store in a cool, dry place away from direct sunlight.

Dipping sauce (50g): Water, sugar, fish sauce, garlic, chilli, acetic acid (E260), antioxidants (E300), preservatives (E202).
