I love the purple sweet potato. It is so good for you and is dryer and slightly less sweet than the typical orange ones. It is also fluffier too. My favourite way to cook them is less healthy though as I love to have them in a tempura. Sliced in thin rounds, dipped in the tempura batter and deep fry. I then like dipping them in a little soy sauce with wasabi (It is not traditional to do this with tempura but I like it this way). But they are great in so many recipes and make a great mash. It looks great on the plate as it is so vibrant in colour.
I buy these purple sweet potato whenever tuktuk mart has them. They last for ages, just as potato’s and other sweet potatoes do. But to help others, 1kg of these purple sweet potatoes is about 3 sweet potatoes so you won’t have heaps of them to worry about.
