Tuk Tuk Method: Rinse until the water runs almost clear, cook, then fold seasoned sushi vinegar through the warm rice for sushi. Or serve it plain with katsu curry, teriyaki salmon or a donburi topping. Leftovers press beautifully into onigiri.
