Tuk Tuk Method: 1. Chop radish into sizeable chunks weighing approximately 140-170g per piece. Slice the fish cakes into long strips and stick them through wooden skewers. 2. Pour 6 cups of water into a large pan. Add the chopped white radish, a handful of dried anchovies, and a large piece of dried kelp. Bring the broth to a simmer for 30 minutes before removing the anchovies and kelp. 3. Add chopped spring onions and the skewered fish cakes. Boil the broth before quickly reducing it to a simmer for 10 minutes. 4. Ladle the soup in a bowl and garnish it with chopped spring onions and crown daisies. Serve to pipe hot with soy sauce, mustard or wasabi on the side.
