Thai sauces are the shortcut to Thai cooking that actually works — the same pastes and bottles the restaurants use — and this collection stocks the essentials: curry pastes, sweet chilli, fish sauce, oyster sauce and the specialist bottles.

The curry pastes are the foundation.
