Description: Fresh Thai chillies — a 100g mix of small green and red chillies from Thailand, the hot little bird's eye type used across Thai cooking. They bring sharp, clean heat with a fruity edge, and a couple of pods is usually plenty for a curry for four. Essential for curries, salads and spicy dishes.
Tuk Tuk Method: Pound into curry pastes and nam prik dips, slice over som tam, or chop into fish sauce with lime and garlic for prik nam pla — the all-purpose Thai table condiment. The green pods are slightly grassier, the red slightly sweeter.
Storage: Keep refrigerated in a paper bag or loosely closed container. They also freeze well whole — slice or pound straight from frozen.
