Fresh Round Eggplant (Thai Aubergine) 200g

Fresh Thai aubergine (round eggplant) is the small, green-striped aubergine you find bobbing in a proper Thai green curry. About the size of a golf ball, it has a firm, crunchy texture and a gentle bitterness that mellows as it cooks. There is no need to peel it: halve or quarter and it holds its shape in the pot, soaking up the curry around it.

Drop into gaeng keow wan for the last 10 minutes of simmering, slice thin for serving raw with nam prik dips, or stir-fry with holy basil and chilli. We only stock fresh produce we are happy to cook with ourselves, delivered fresh across the UK.

Once delivered, store in the refrigerator and use within a few days.
