Description: Fresh Winged Bean (Thai) 100g is one of Southeast Asia's most distinctive vegetables — winged beans, so called for the four frilly "wings" running down each pod. The pods are crisp, with a flavour somewhere between a green bean and a pea. Young pods can be eaten raw, thinly sliced into salads, though most cooks blanch or stir-fry them briefly to keep their crunch. Ours are delivered fresh across the UK.

Tuk Tuk Method: Slice and stir-fry with garlic, chilli and shrimp paste. Blanch for a minute and dress with lime juice and fish sauce for a Thai-style salad. Or simmer in a mild coconut curry.

Storage: Once delivered, store in the refrigerator and use within a few days.
