Description: South Word yellow rock sugar 南字牌 黃冰糖 is cane sugar crystallised into large amber lumps. Yellow rock sugar is less refined than white, with a gentle caramel edge, and it melts slowly to give a clean, rounded sweetness rather than a sharp one — which is why Chinese and Vietnamese cooks reach for it for broths, braises and teas.
Tuk Tuk Method: Drop a lump into pho or master stock for a glossy, mellow sweetness. Melt into red-braised pork belly or sweet tong sui dessert soups. One lump sweetens a pot of chrysanthemum or longan tea nicely.
