Description: X.O tamarind with sugar and chilli is a chewy Thai tamarind candy — soft tamarind pulp pressed with sugar, salt and a warm tickle of chilli. Sweet first, then sour, then a gentle heat at the end. Mind you, this is a snack rather than a cooking paste: the sort of bag that disappears from the glovebox or desk drawer faster than you meant.
Tuk Tuk Method: Eat straight from the pack, one piece at a time. Lovely alongside slices of fresh mango or pineapple, or with hot tea after a meal. Keep a bag in the car for long drives.
Storage: Store in a cool, dry place away from direct sunlight. Reseal once opened.
