Description: Zab Mike Fermented Fish Sauce 350ml is pla ra — the pungent Thai fermented fish sauce behind Isan and Lao cooking, not the clear, everyday nam pla you splash into stir-fries. It's made by fermenting fish with salt and roasted rice powder for at least six months, giving a thick, cloudy sauce with a salty-sour depth and a proper funky aroma. A little goes a long way. If you're making som tum (green papaya salad) or larb and want it to taste like it does in Thailand's northeast, this is the bottle.

Tuk Tuk Method: Pound a spoonful into som tum with lime, chilli and palm sugar. Season larb, nam tok and Isan-style grilled meats. Add a few drops to nam prik dipping sauces. Start sparingly — it's far stronger than ordinary fish sauce, and not a like-for-like nam pla substitute in delicate dishes.
