Description: Chang frozen kaffir lime leaves 雪藏 檸檬葉葉 give you the unmistakable citrus perfume of fresh Thai lime leaves straight from the freezer. Freezing locks in the aroma far better than drying, and there is no waste: use a few leaves at a time and keep the rest frozen. There is no need to defrost either, just tear or shred the leaves straight into the pot. A 100g bag is a long-lasting staple for Thai cooking.

Tuk Tuk Method: Shred finely into a Thai green or panang curry as it simmers. Bruise a couple of leaves and drop into tom yum or tom kha gai for that bright citrus note. Or slice paper-thin and mix through a Thai fish cake paste before frying.

Storage: Keep frozen. Take out what you need and return the rest to the freezer straight away.
