Description: Young galangal 高良薑 is the tender, pale rhizome Thai cooks slice into tom kha. Being young, it is far less fibrous than mature galangal, so it slices thinly without a fight and can even be pounded straight into curry pastes. It looks like ginger but tastes quite different — peppery, pine-like and faintly citrusy, where ginger is warm and sweet. Delivered fresh across the UK.
Tuk Tuk Method: Slice into coins and simmer in coconut milk with chicken for tom kha gai. Bruise a few slices for tom yum or a lighter, brighter red curry paste. Young slices are tender enough to leave in the bowl — older, woody galangal is not.
Storage: Keep refrigerated and use within a week, or slice and freeze for up to 3 months.
