Tuk Tuk Method: Place the noodles in a large bowl, cover with boiling water and leave for 3 minutes (2 if you are stir-frying). Rinse in cold water and drain, then add to the soup — or toss through stir-fries and salads. Top with sliced pork, beansprouts and crushed peanuts for the full boat-noodle effect.
