Description: Rose Brand Tapioca Starch 玫瑰牌水磨菱粉 500g is fine, pure starch milled from cassava root — the thickener behind glossy Chinese sauces and the chew in boba pearls. Tapioca starch is not the same as cornflour: it thickens at a lower temperature, gives a clear, glossy finish rather than a cloudy one, and holds up in frozen or acidic dishes. It is naturally gluten-free, and a little goes a long way.
Tuk Tuk Method: Slurry with cold water and stir into stir-fry sauces for a glossy finish. Dust over chicken or tofu before frying for an extra-crisp coating. Or cook with sugar and water for chewy homemade boba pearls for bubble tea.
