Description: Shumei Dried Tofu 香豆干 500g. Dried tofu, or dougan, is fresh bean curd pressed until it is firm enough to slice thin and hold its shape in the wok, then braised in soy sauce so it arrives already seasoned and a deep tea-brown right through. It is a world away from soft or silken tofu: dense, faintly chewy, savoury on its own, and it will not crumble in a stir fry. Cut it into matchsticks with celery and chilli, braise it further with star anise, shred it into a cold salad with sesame oil, or drop it into a hotpot where it takes on the broth without falling apart. High in protein and low in fat, at 17.4g of protein and 1.0g of fat per 100g. Retort sterilised at 121°C and vacuum packed, so it is a store cupboard item rather than a fridge one until you open it.
