Enoki Mushroom (200g) 金針菇

Description

Fresh enoki mushrooms (金針菇) are the slender white mushrooms you see tucked into Japanese, Korean and Chinese hotpots. They grow in tight clusters of long stems and tiny caps that stay pleasingly crunchy when cooked. The flavour is mild and slightly sweet, so they take on the character of whatever broth or sauce they meet. Ours arrive fresh and firm, delivered across the UK — just trim the root end, rinse quickly, and they are ready in minutes.

Tuk Tuk Method

Add to miso soup or hotpot in the last two minutes of cooking. Stir-fry with garlic, soy sauce and a little sesame oil. Or wrap small bundles in thin beef or bacon and grill for an easy izakaya-style side.

Storage

Keep refrigerated in the original pack or a paper-lined container and use within a week.
