Description: Kirin Brand Rice Stick Medium (3mm) 400g — the dried rice stick noodles pad thai is made with. Flat, firm and made from just rice and water, they soften with a soak and turn springy in the wok, soaking up tamarind, fish sauce and lime. The medium 3mm cut is the all-rounder: classic for pad thai, good in noodle soups and curries, and they even puff up crisp if you deep-fry them straight from the pack.
Tuk Tuk Method: Soak in hot water for about 10 minutes, drain, then stir-fry with egg, beansprouts, peanuts and tamarind sauce for pad thai. Add soaked noodles to curries and soups. Or deep-fry them dry for a crispy noodle garnish.
Storage: Store in a cool, dry place away from direct sunlight.
