Description: Lee Kum Kee Chiu Chow Chilli Oil 335g is the savoury, garlicky chilli oil of the Chiu Chow (Chaozhou) tradition, made by one of Hong Kong's best-known sauce brands. Dried and salted chillies bring the heat, while dehydrated garlic, soy sauce and sesame oil give a deep, rounded savouriness. Compared with crispy chilli oils such as Lao Gan Ma, it is smoother and more aromatic — a seasoning oil as much as a condiment. A jar earns its place next to the soy sauce.
Tuk Tuk Method: Spoon over wontons and dim sum with a splash of black vinegar. Stir into noodle soups, congee or fried rice. Or whisk with soy sauce and a little sugar for a fast dipping sauce for hotpot and dumplings.
