Tuk Tuk Method:

Boil 500ml of water. Add a piece of finely chopped lemongrass, 200g of shredded chicken meat and 30g with 'Tom Kha Paste' and simmer for 5 minutes.
Add 200ml of coconut milk, lime leaves and 1 cup sliced mushrooms and simmer for another 3 minutes.
At serving garnish with fresh coriander leaves and finely shredded red chilli.
