Tom yum is known for its distinct hot and sour flavours, and this tin is generous with the aromatics — lemongrass, kaffir lime leaves, galangal, lime juice and fresh red chilli — with oyster and straw mushrooms in the broth. Maesri is a long-established Thai brand, and this soup makes a fast starter or a light supper for one or two.

Tuk Tuk Method: Heat gently and serve as a spicy starter. Or add prawns, chicken or extra vegetables and simmer for a fuller meal — a bowl of steamed jasmine rice alongside turns it into supper. Finish with fresh coriander and an extra squeeze of lime.
