It is spicier and more peppery than pad thai, with none of the tamarind sweetness. Ready in minutes, it makes a quick lunch or a late-night snack.

Tuk Tuk Method: Boil the noodles, drain and toss with the seasoning. Add a fried egg and cooked chicken or prawns to make it a meal, or stir-fry the drained noodles with vegetables and a splash of soy sauce. A squeeze of lime on top works well.
