Description: Penta instant tom yum paste is the hot-and-sour heart of Thailand's most famous soup, ready in a jar. Lemongrass, galangal, chilli and shallot are all in there — you just add water or stock, prawns and mushrooms, then sharpen with lime. This 908g jar is the catering size: right for restaurants, and for households where tom yum is a weekly habit.

Tuk Tuk Method: Stir 2–3 tablespoons into a litre of simmering water or light stock with prawns, mushrooms and tomato; finish with lime juice, fish sauce and fresh coriander. A spoonful also makes a fine base for tom yum fried rice or spicy noodle stir-fries.
