Description: Twin Swallows Kong Moon rice vermicelli 江門排粉 is a fine dried rice noodle in the style of Jiangmen (Kong Moon), the Cantonese city famous for it. Made from 88% rice and water, the noodles cook up light and separate rather than gummy, which is why Kong Moon vermicelli is the classic choice for Singapore noodles. Soak in hot water for a few minutes until pliable, then stir-fry or drop into soup.
Tuk Tuk Method: Soak, then stir-fry with curry powder, char siu, prawns and peppers for Singapore noodles. Toss with soy sauce, sesame oil and beansprouts for a simple chow mei fun. Or add to a clear chicken broth with shredded chicken and spring onion for a light noodle soup.
