Frozen desserts are the secret weapon of the Asian freezer: puddings and sweet treats that go from freezer to table in minutes and taste like far more effort than they are. This collection gathers the best of them, from glutinous rice balls to Japanese dorayaki.

Tang yuan — glutinous rice balls with molten fillings — are the essential buy. Simmered from frozen for a few minutes, they burst with black sesame, peanut or red bean filling in a sweet ginger broth: the traditional pudding for Lantern Festival and winter evenings generally. Dorayaki, the Japanese pancake sandwiches filled with custard or chocolate, need only thawing. Taro buns, sesame buns and rabbit-shaped custard buns steam up soft and sweet, and the mini peach buns filled with lotus paste are the birthday-table classic.
