How to Make the Perfect Egg Fried Rice

Egg fried rice is the ultimate fridge-clearer: yesterday's rice, a couple of eggs and whatever needs using up, turned into something better than a takeaway in about 15 minutes. It's also the dish most home cooks get slightly wrong — usually by using fresh rice or a timid pan.

This recipe makes two generous portions, with the five small techniques that separate fluffy, restaurant-style fried rice from a stodgy pan of disappointment.

Equipment

A wok is ideal because its shape lets you toss rice without it escaping, and thin metal gives you fierce, responsive heat. If you're cooking on an electric or induction hob, choose a flat-bottomed carbon steel wok — round-bottomed woks are for gas flames. A large frying pan works too; just don't crowd it.

Method

  1. Prep everything first. Fried rice waits for no one. Break up the cold rice with wet fingers so the grains are separate, beat the eggs, slice the spring onions, and mix the two soy sauces in a small bowl.
  2. Scramble the eggs. Heat the wok over high heat until it's properly hot, add half the oil, then pour in the eggs. Scramble for 30–60 seconds until just set but still soft, then tip them out onto a plate. They'll finish cooking later.
  3. Fry the aromatics. Add the remaining oil and the spring onion whites. Stir-fry for 20 seconds until fragrant.
  4. Fry the rice — and leave it alone. Add the rice, spread it across the hot surface and resist stirring for 30 seconds. Letting it sit is what gives you those lightly crisped, toasted grains. Toss, spread, repeat for 2–3 minutes.

  5. Season down the side of the wok. Pour the soy sauce mixture around the hot edge of the wok rather than straight onto the rice — it sizzles and caramelises as it runs down, adding a whisper of that smoky "wok hei" flavour. Add the Shaoxing wine the same way, then toss everything together.
  6. Bring it back together. Return the eggs, breaking them up with your spatula. Add the peas or sweetcorn if using, the spring onion greens and the white pepper. Toss for another minute.
  7. Finish off the heat. Take the wok off the heat and stir through the sesame oil. Sesame oil turns bitter if you fry it, so it always goes in last. Taste, add a splash more light soy if it needs it, and serve immediately.

5 tips for perfect egg fried rice

  1. Use day-old rice. Chilled rice has dried out slightly, so the grains stay separate and fry rather than steam. This is 80% of the battle.
  2. Forgot to cook rice yesterday? Spread freshly cooked rice on a baking tray and chill it in the freezer for 20–30 minutes. Not perfect, but close.
  3. Get the pan properly hot. If the rice isn't sizzling, it's stewing. High heat from start to finish.
  4. Don't overcrowd. Two portions per wok, maximum. Cooking for four? Fry in two batches — it only takes 5 minutes each.
  5. Season lightly, taste, adjust. Soy sauces vary in saltiness. You can always add more at the table; you can't take it out.

Easy variations

  • Kimchi fried rice (kimchi bokkeumbap): chop 100g of well-fermented kimchi, fry it with the spring onions and add a spoonful of the kimchi juice. Top with a fried egg.
  • Chicken fried rice: dice a chicken breast, marinate in a teaspoon each of light soy and Shaoxing wine, and fry it before step 3.
  • Prawn fried rice: add raw peeled prawns after the spring onions; they're done the moment they turn pink.

Egg fried rice FAQs

Can I use freshly cooked rice for fried rice?
You can, but it won't be as good — fresh rice is moist and clumps into a stodgy texture. Day-old chilled rice fries into separate, lightly crisped grains. In a pinch, spread fresh rice on a tray and freeze it for 20–30 minutes to dry the surface.

Why is my egg fried rice mushy?
Three usual suspects: the rice was too fresh or wet, the pan wasn't hot enough, or the pan was overcrowded. Fix all three — cold dry rice, fierce heat, small batches — and the problem disappears.

Do I need a wok to make fried rice?
No. A large frying pan over high heat works well; a wok just makes tossing easier and gives slightly better charring. If you cook stir-fries often, a carbon steel wok is a worthwhile upgrade.

How long does egg fried rice keep?
Cool it quickly and refrigerate within an hour of cooking. It keeps for up to 24 hours — reheat until piping hot throughout, and don't reheat it more than once. (Rice grows bacteria at room temperature faster than most foods, so never leave it out for hours.)

Is egg fried rice gluten free?
Not as written, because regular soy sauce contains wheat. Swap in a gluten-free light soy sauce and leave out the Shaoxing wine, and it easily can be.
